Looice - Show ice cream in Chemnitz

Ice cream, fresh from the ice cream machine - mmmh, delicious! Creamy, soft, very fresh! But unfortunately, it's not that easy for customers to get their hands on it, because they don 't have access to the ice cream lab where the ice cream comes fresh out of the machine. Normally, customers are only allowed to taste the ice cream when it is in the ice cream display case - that is, after the ice cream has been removed from the ice cream machine, ideally shock-frozen, temporarily stored in the ice cream storage cabinet and then brought to the ice cream display case. There it is still delicious, but no longer "fresh from the machine".

At the "Looice" ice cream café in Chemnitz , things are different now: there, customers can not only watch the ice cream being made right before their eyes , but it is also sold directly from the ice cream machines - and yet there are 10 different flavours every day!

This is possible because the team around the operator Matthias Elbe did not want a "normal" ice cream parlour with the "Looice", but something special: show ice cream production! The great thing for us: We, Alois Krä GmbH, were allowed to develop the concept and provide the technology.

Bye Bye Ice Cream Display Case

There is no classic ice cream display case in Looice. Directly in the front counter are Two show ice cream machines from BGI with a total of 10 cylinders. In these, the ice cream slowly transforms from liquid ice cream mix to soft, creamy ice cream right before the customer's eyes. Believe us: it is an almost hypnotic sight!

Incidentally, the most important parameters for each type of ice cream - including firmness and air impact - can be stored in the machines. This makes "ice cream making" in the show ice cream production completely simple: pour in the mix, select the variety, done. The real art of ice cream making happens in the back of the shop, where the ice cream mix is made.

Ice lab? Yes, but differently...

Because in the back of the shop there is still an ice cream lab - only it is no longer the finished ice cream that is made there, but only the ice cream mix in the Carpigiani pasteurisers, always fresh according to classic recipes. So when a type of ice cream runs low, it's not a fresh bowl from the ice cream storage cabinet but fresh mix from the fridge that is fetched, poured into the BGI ice cream machine and the process starts all over again. And again, the customer can watch the ice cream freeze out...

Ideal for franchise concepts

And the great thing about it: because the parameters of the individual varieties can of course be transferred to other locations via USB stick, the system is perfect for a franchise concept. The individual varieties are produced in the central laboratory and transported refrigerated to the individual locations. There, the perfect parameters for the individual varieties are already preset, and the operator on site only has to fill in and select the programme. It couldn't be easier. Of course, there are also suitable sprint and ready-made products for this concept - but that is out of the question at Looice, where they are proud of the classic ice cream recipes from the old days.

More than just show ice cream

Even if the show ice-cream production is both the centrepiece and the highlight of the "Looice": The rest is also more than impressive! The classic, elegant design of the counter and the seating. The "open" ice cream laboratory (albeit "only" through a window), where the customer can watch the ice cream mix being made. And the homemade cakes and desserts from the elegant cake tower.
